Den
Den is the restaurant of chef Zaiyu Hasegawa, in the JIA architects' building on Gaien-Nishi Street in Jingumae. It began in Jimbocho, hence the name of its site, and moved here. In the Michelin Guide it has two stars, and when checked on 2 November 2026 this is what the guide's site shows, under Japanese cuisine.
There is one evening and one menu: the chef's omakase, and the dishes change daily according to what is in season. The kitchen is known for its humor: Michelin and Asia's 50 Best describe a foie gras waffle with miso, a chicken wing stuffed with sticky rice or mushrooms, served in a takeaway box with the chef's face, and a salad of fried, pickled, grilled and raw vegetables. According to Michelin the vegetables are grown without pesticides and chemical fertilizer.
It suits one festive day, for those who plan the booking two months ahead. The restaurant is not kosher. No fixed vegetarian menu is published: the restaurant writes that it will try to accommodate but does not promise, and fish and meat are a regular part of the omakase, so if you are vegetarian, say so when you book and get an answer.
Good to know
- Canceling or reducing diners on the day itself costs the full price of the meal. Give notice at least two days before, and for a Monday booking notify by Saturday.
- The restaurant writes that it is hard to reach by phone and that there is little room for same-day places. If you do not get through on the first try, call again later.
- State every allergy and restriction in the booking request, not on the morning of the meal. We found no guidance on dress or photos on the official site, and according to Tabelog credit cards are accepted.
